Fussy Eater

I'm a really fussy eater but I'm trying to get over that. I want to learn to like new foods and learn to cook them so that a) I'll be able to nourish myself better, I'm on the skinny side and I'd love to be healthier and b) So that I'll be able to plan a menu for myself, guests, housemates, partner and one day kids.  I'm a woman in my 20's and live alone so it's important now that I grow up a little bit and learn something as basic as feeding myself and others.

There are a few meals I already like, and that are easy enough to cook or order in. Right now I can't cook them all from scratch, but that's okay. Maybe one day I'll learn, if it's worth it..

Dinners that I like and can currently prepare are:
Curry & Rice
Pizza
Roast Dinner (Chicken, potatoes and vegetables)
Spicy Chicken Breast (Peri Peri Marinade, Cajun Style etc.) with side of fries/roast potatoes/homemade chips & savoury rice
Macaroni and Cheese (could greatly improve, should think about the local pub's recipe which is delicious)
Various soups & Breads

Meals I like and I'd like to be able to cook:
Chinese style fresh noodles with chicken and chinese vegetables
Singapore noodles
Malaysian style vegetables
Beef Stew a la Stepfather's recipe with his special homemade chips in goose fat
Various tapas

Now & Then unhealthy treats such as pakoras, fry ups, burgers, sausages, hot dogs, mexican takeaway, chinese takeaway

Lunchtimes? Sandwhiches, good cold meats, good cheeses
Breakfast? Cereals, fruit, cream, bread and soft cheese, good jam
Dessert? Cheesecake, gateaux, fruit salad
Snacks? Nuts, crisps, chocolate, fruit, chilled snacks

I'm stuck thinking of new ideas for the kitchen.
